The new oenology combines the use of concrete vats with stainless steel tanks, the use of traditional oak barrels with the innovative insertstaves, the use of synthetic corks with natural corks, and the defiant use of indigenous yeast. Our style, our identity is defined by unfiltered wines blended with a percentage of bleeding to enhance them, by 80-year-old vineyards that produce young wines, and by the combination between the old oenology techniques and the new technological practices.
